Why do I need to store the name of the admin?

The only reason the name of the admin is stored is so that when you have multiple admins, you can know which one to delete later on, should you need to delete one.

What happened to my Facebook Admin tag: “fb:admins”?

Yoast is only able to output one tag or the other. If you add a “fb:app_id” it will override and replace the “fb:admins” tag.
